Letter writing would be good for an observation. I haven't done one of those writing workshops in years, but those are awesome. Kids love writing letters. Ha, I still made my fifth graders do letters to Santa.

and...I love Step Up to Writing. It's awesome organization. We also just learned about the Six Traits of Writing. Check it out at http://www.helpkidswrite.com . There are some cute little people with great ideas! :)
